I have had a quick look at the manual and it seems the only way to turn them off is to put them in a case.
If I am out and about and not carrying the case, I want to stop listening to music, put them in my pocket and then hear my phone normally through it's speakers.
How do I do this?

The earbuds will remain on as long as they are connected to a device. If no audio is in use, they will enter power-saving mode and wake up once audio is played. If the earbuds are not connected with any devices, they will automatically shut off in 10 minutes. Hence, if you want to turn them off without the case, you need to make sure the earbuds are not connected with any device first.

When the mobile phone is connected to the Bluetooth device, the voice will be played through the Bluetooth device by default. When the Bluetooth device is disconnected, the music player will automatically pause, and it needs to be played manually at this time.
