I have had a quick look at the manual and it seems the only way to turn them off is to put them in a case.
If I am out and about and not carrying the case, I want to stop listening to music, put them in my pocket and then hear my phone normally through it's speakers.
How do I do this?

The earbuds will remain on as long as they are connected to a device. If no audio is in use, they will enter power-saving mode and wake up once audio is played. If the earbuds are not connected with any devices, they will automatically shut off in 10 minutes.
