There should be indications (Normal, Noise cancelling, Ambient Sound) when switching modes.
We kindly suggest you reset and reconnect the earbuds as per the updated steps:
Step 1: Place both earbuds into the charging case.
Step 2: Keep the charging case open, touch and hold the button on each earbud simultaneously for at least 10s until they flash in purple, then earbuds have been reset successfully.
Step 3: Delete the old connection from the Bluetooth device and reconnect “EarFun Free Pro".

As for the tap control, we kindly suggest you clean the tap area first and then tap the center point of the button to control. Sometimes, you may also need to control the rhythm and frequency of tapping and try several times more to be familiar with the operation and then you will touch the correct area and control the earbuds.
You can also hold the left earbud in your left hand, tap the touch area with the index finger of your right hand to see if there is indication.
Kindly note that the EarFun Audio App is currently only compatible with the latest Air Pro SV. It couldn't manage the previous model due to the software or firmware difference between different earbuds. Sorry for any inconvenience caused.
